ELEGANT DINING That special occasion with just the two of you or a small group, deserves a special place, such as a restored sugar mill with beautifully restored stonework (Sugar Mill) or a location on an exquisite bay (Little Dix Bay). And the food, of course, is the result of years of preparation, the chef rising among many competitors to the top of the profession, especially in the Caribbean--who would not want to cook in Paradise? This is elegant dining. In fact, many of these chefs have appeared on the Discovery Channel's Great Chefs of the Caribbean See TV Schedule. Richard Buttafuso of the Sugar Mill Hotel creatively combines the delicious Vietnamese spring roll with the traditional salt fish.with his international appetiser, Salt Fish Spring Rolls. Suddenly pulling out a torch, Troy Smith of the private Necker Island Resort, "glazes" the sauce with its open flame, before sending his Crayfish Medallions with Oyster Sabayon to the table (see crayfish). In addition, BVI chefs have had great success at the Caribbean "Olympics." See Seven Golds for BVI Culinary Team. Proper Attire? Here is the Dress Policy at Little Dix Bay: "Shorts or dry bathing suits with shirts or cover-ups are acceptable during the day in the dining rooms and public areas. After sunset, gentlemen are requested to wear a shirt with collar, trousers and closed-in footwear. Ladies may wear suitable evening attire. Swimwear, shorts, jeans and tennis shoes are not permitted after sunset." Take a tour with us of the best restaurants in the islands.
